Dice the potatoes, tomoatoes, eggplants, and bell peppers into small pieces. Chop the spinach, and put all ingredients in the multicooker. Close the lid, press STEW, and choose VEGETABLES. Set the timer for 30 minutes and press START.
For additional flavor, serve with spaghetti sauce or tomato paste.
